The Father's Day Cupcake: Jack Daniel's Whiskey Cake with Coffee Buttercream


Some say, "It's not Father's Day without beer."
or
"It's not Father's Day without steak."

"It's not Father's Day without whiskey."
and 
"It's not Father's Day without cake."
That's what I'm talkin' about.


Jack Daniel's Whiskey Chocolate Cupcakes

Ingredients:

  • 1 cup milk
  • 1 tablespoon white vinegar 
  • 2 cups all purpose flour
  • 3/4 cup cocoa powder
  • 2 cups brown sugar 
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1/2 cup strongly brewed coffee, cooled
  • 1/2 cup Jack Daniel's Whiskey 
  • 1/2 cup vegetable oil

Method:

  1. Preheat oven to 350 degrees and prepare a cupcake pan with liners.
  2. Stir together milk and vinegar to make "buttermilk." Let rest for 5 minutes.
  3. In a large bowl, sift the flour, cocoa powder, brown sugar, baking soda, baking powder, and salt. 
  4. Add eggs, coffee, and whiskey to the "buttermilk" and whisk to combine. 
  5. Pour the wet ingredients into the flour mixture and beat until fully combined (about 1-2 minutes). The batter will be runny.
  6. Divide the batter into the cupcake liners. Bake for 18-20 minutes or until a toothpick stuck into the center comes out clean. Let cool before frosting.

Coffee Buttercream Frosting
Yield: about 3 cups

Ingredients:
  • 1/2 cup unsalted butter, softened
  • 3-1/2 cups powdered sugar 
  • pinch salt
  • 4 tablespoons milk 
  • 1 tablespoon instant coffee
  • 1 teaspoon pure vanilla extract
  • chocolate covered pretzels (optional)

Method:

  1. In the bowl of an electric mixer, cream butter with a paddle attachment.
  2. Sift the powdered sugar and slowly add to the creamed butter. Add salt. Beat on medium speed for 2 minutes. 
  3. In a small bowl, stir together the milk, instant coffee, and vanilla. Add to the butter and sugar mixture and continue to beat until light and fluffy, about 3-4 minutes.
  4. Use to frost cupcakes and top with a chocolate pretzel.

*Tips for the health-conscious*
  • For a dairy-free option: use almond milk in place of milk for the cake and Earth Balance in place of butter for the frosting. 
  • In place of brown sugar, use raw turbinado sugar.
  • Replace cocoa powder with raw cacao powder
*Tips for the thirsty*
  • Serve with whiskey.
