Vegan Apple Spice Bread

What happens when you are in the mood to make roasted butternut squash bread, but your butternut squash (sadly) went bad? 
Resort to the giant bag of apples you hoard in the fridge, of course.


Vegan Apple Spice Bread

Yield: 1 standard loaf (8"x 4" pan)
2 cups whole wheat flour
1/4 cup raw sugar (or brown sugar)
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1/2 teaspoon ginger
1 teaspoon cinnamon
1-1/4 teaspoon baking soda
1-1/4 teaspoon baking powder
1/4 teaspoon salt
2 cups diced/shredded apples
1/2 teaspoon vanilla
1 cup apple sauce
1/3 cup almond milk or water

1. Preheat oven to 350 degrees and grease + line a bread pan.
2. In a large bowl, mix together the flour, sugar, spices, baking soda, baking powder, and salt.
3. Make a well in the center and add the apples, vanilla, apple sauce, and almond milk/water. Fold the wet ingredients into the dry until fully combined, being careful not to over mix).
4. Pour into pan evenly and top with thinly sliced apples, cinnamon, and raw sugar.
5. Bake for 30-40 minutes until a toothpick inserted into the center of the bread comes out clean.
6. Even though professionals would disagree (because you aren't supposed to dig in until the loaf is cool, so all the flavors set in and what not), I say if you are at home and you just made a loaf, eat it while it's warm!
